Easy & Spicy Chicken Fajitas (Perfect for Game Night)
When it comes to a quick, delicious meal that feels like an event, it's hard to beat fajitas. Whether I'm prepping for a long gaming session or just need a satisfying weeknight dinner, this spicy chicken fajita recipe is my go-to. It's packed with authentic flavor, and the best part is you can easily customize it.
Don't like the heat? Just leave out the cayenne and serrano peppers. Prefer steak? This marinade works perfectly for that, too. This is one of those simple, no-fuss recipes that delivers big on taste every single time. Let's get to it.
Ingredients

| 3 | Bell Peppers (a mix of colors) |

| 1/2 | Serrano Pepper (optional, for extra heat) |

| 1 Can | Tomato Sauce (8 oz) | 
| 1 cup | Water | 
| 1 tbsp | Brown Sugar |

Instructions
Marinate the Chicken: Place your chicken breasts in a large bowl and pat them dry with a paper towel. Add all the marinade ingredients: lime juice, soy sauce, cilantro, and all the dry spices. Give it a really good mix to make sure every piece of chicken is nicely coated. Cover and pop it in the fridge for at least a few hours the longer it marinates, the better the flavor will be.
Prep the Veggies: Slice up your bell peppers and onions. If you're using it, finely chop the serrano pepper.
Sear the Chicken: Get a large, deep pot or skillet on the stove over medium heat. Add a drizzle of olive oil and the brown sugar. Once hot, place the marinated chicken in the pot. Sear it for just 1-2 minutes per side to get a nice brown crust. It won't be cooked through yet. Remove the chicken from the pot and set it aside.
Cook the Veggies: Toss all your sliced peppers and onions into the same pot. Add the cup of water, the can of tomato sauce, fresh garlic, and a little more salt. Stir everything together.
Slice the Chicken: While the veggies are cooking down, take your seared chicken and cut it into thin slices.
Combine and Simmer: Add the sliced chicken back into the pot with the veggies. Stir to combine, then cover the pot. Let it all simmer together for about 7-10 minutes, allowing the chicken to finish cooking and all the flavors to meld.
Serve Hot: That's it, you're done! Serve immediately with warm tortillas and your favorite toppings.
